Dahi Bhalla is a delicious recipe which is famous in almost every places of india. This recipe takes some more time as compared to other recipes but if we talk about the taste then this is the most delicious among all. This is a super delicious recipe which is a combination of all like chatpata, sweet, salty, spicy and many more tastes. So without wasting time let start the recipe.

Ingredients

For making the vada

Black gram (urad dal) – 2 cup

Rice flour – 2 tbsp

Salt as per taste

Ingredients for dahi

Dahi (curd) – 3 cup

Water – 1 ½ cup

Black salt – 1/2 tsp

Red chilli powder – 1/4 tsp

Lemon juice – 1 tsp or juice of 1/2 of a lemon

Roasted cumin powder – 1 tsp

Crushed ginger – ½ tsp

Salt as per your taste

For tadka

Panch phoron – 1 tsp

Curry leaves – 20 no

Dry red chilli – 4 no

Oil – 2 tsp

Method

For making this Dahi Bhalla first we have to take 2 cup of black gram, soak them with enough water for 4-5 hours. Then nicely wash them and strain all the water. Now make a thick paste of it. Remember don’t add too much of water while grind it, if require then add a little water. Now rest the urad dal paste for 4-5 hours. Resting time is compulsory so don’t skip it.

After that we are going to make the water in which we soak the vada. So for this take a big pan or kadhai or any big utensil, add around 750 ml of water or 2-3 glass of water and add salt as per your taste. Now heat a tadka pan, add 1 tsp oil and let the oil becomes heat. After oil becomes heat add 1/2 tsp panch phoron, 2 dry red chilli, 10 curry leaves and immediately add the tadka into the water. After that boil the water for 2-3 minutes or you can also add the tadka in previously boiled water.

Now we are going to make the dahi. So for this take a big utensil, add dahi, water, black salt, roasted cumin powder, crushed ginger, salt as per your taste, red chilli powder and lemon juice and mix all the ingredients very well. Now it is the time for tadka. Take a tadka pan, add 1 tsp oil and let the oil becomes heat. After oil becomes heat, add ½ tsp panch phoron, 2 dry red chilli, 10 curry leaves and add the tadka to the dahi and mix it well and cover it.

After that we are going to deep fry the vada. Here we take the vada batter, add salt as per your taste and mix it very well. Now check whether it can hold in your palm or not means batter consistency for vada is perfect or not. If it is perfect then deep fry the vada otherwise add some rice flour as per requirement, mix very well and then deep fry the vada. Make all the vada very carefully by using your palm or you can also make vada by using banana leaf or any plastic sheet like milk packet.

After frying the vada add them into the tadka water. Now let the vada soak in the water completely. When you add vada into water it floats and when it was soaked in water completely it deeps in the water. When vada deeps in water means completely soaked, take it out from water, squeeze a little and then deep in dahi. Let the vada soak in dahi for 10-15 minutes. Now the dahi bhalla is ready to serve.

Finally all the cooking process is completely done. So now it is the time for assembling the dahi bhalla. Take a bowl, add 4 dahi bhalle, 1 big spoon of dum aloo, 1/2 spoon green chutney, some sev, pinch of black salt, 1/2 spoon of sweet chutney, some finely chopped onion and pinch of red chilli powder. Here I am telling you one process but you can serve this as per your choice. So you make your own dahi bhalla and enjoy.

Cookies

Cookies are the best evening snacks for everyone. Here I am going to share a cookie recipe without oven. The taste of this cookie is very delicious. This is a best tea time snacks or used as a launch box item as well. Here I am sharing a very simple and easy method of making cookies. So let start the recipe.

Ingredients

All purpose flour (maida) – 4 tbsp

Wheat flour – 2 tbsp

Suji (semolina) – 2 tbsp

Oil – 3 tbsp (for cookies dough)

Milk – 1/2 cup

Sugar – 4 tbsp

Salt to taste

Grated coconut – 4 tbsp

Enough oil for deep frying the cookies

Method

Cookies are the best evening snacks and to make this cookies at home first take a big bowl. Now add maida, wheat flour, suji, oil, sugar, grated coconut, salt as per your taste or 1/2 tsp and mix all the ingredients very well. Now gradually add milk and make a semi soft dough(not too much hard or not too much soft). If your dough becomes sticky add some flour and knead it to make perfect dough. If dough was too hard then add some milk to make the dough perfect.

We need perfect dough for this cookie. After making the dough perfectly rest it for 15 minutes. So after 15 minutes, knead the dough again. For 1-2 minutes.

Now heat a pan and add enough oil for frying the cookie. After that we take a small lemon size portion of the dough, make a small ball using your palm, press it to give the shape of a cookie. After pressing give it a nice shape by using spoon, knife or any other tools available at your kitchen. You can also fry the cookie without giving any shape.

The design gives a nice look so try to give a nice shape otherwise make it without any shape. Here I am using the below tool for giving the shape of the cookie. I am slightly pressing the cookie on the back side of the vegetable channi and give it the beautiful shape. you can also use a strainer which we always use for strain rice.

After that deep fry the cookie in low to medium flame by changing the sides of the cookie. It takes 5-10 minutes for frying the cookie. Above all frying time is totally depends on the thickness of the cookies ( more thicker cookie take more time to cook.).

Fry the cookies till they are turned light golden brown in colour. After that remove them from oil and keep them on tissue paper. Finally our cookie is ready but don’t serve the cookie hot. Let the cookie cool down for 10-15 minutes then serve. In conclusion I telling you that you can also store the cookies for 10-15 day in an air tight container.

Rice flakes Halwa is always being a healthy breakfast for everyone. This is a quick and easy recipe which can be cooked any time. You can also use this recipe as a tiffin box item. Kids also love this recipe.

 Ingredients

2 cups rice flakes (poha)

1½ cup milk

2 tbsp sugar

1/4 tsp cardamom powder

Salt 1/4 tsp or as per your taste

5-7 cashew nut

Ghee 1/2 tsp

Method

For making this Rice flakes Halwa first heat a pan, add ghee then add cashew nut and fry for 1 minute in low flame. After it becomes light brown colour add milk 1½ cup and water ½ cup. Mix it very well, now add sugar and boil this for 5-7 minutes in high flame by continuously steering the mixture. After boiling it 5 minutes add salt and cardamom powder.

After that wash the rice flakes nicely, squeeze the water using hand and add to the boiled milk. Here we mix the rice flakes with milk on high flame till it becomes thicker. When the rice flakes converted into a thicker texture like halwa switch off the gas. Now the halwa is ready to serve.

I am using here very few ingredients which are easily available in the kitchen that to all of you can make this easily without any difficulty for finding any of the ingredients. This is a delicious halwa with these minimum ingredients but if you want to make it more delicious then add 2-3 tsp condensed milk or you can also use 2 tsp milk powder. More dry fruits like almond, raisin and pistachio can also be used here to make it more tasty. Stuffed Internet Puri

The Stuffed Internet Puri is a very very delicious recipe ever which is good to serve as a breakfast, evening snacks, dinner or any time you like. It takes some more time as compared to normal puri but it tastes better then a normal puri. The ingredients I am using here are easily available at your kitchen. So you must try this recipe at your kitchen.

Ingredients

For dough

All purpose flour (maida) – 2 cups

Oil – 2 tsp

Salt – 1/4 tsp or as per your taste

Enough oil for frying the puri

For stuffing

2 medium size potatoes

Approx 4 inch of carrot or half of a medium size carrot

Turmeric – 1/4 tsp

Red chilli powder – 1/2 tsp

Oil – 2 tsp

Salt as per taste

Soya sauce – 1/4 tsp

Tomato sauce – 1 tsp

Corn flour – 1 tsp

Black paper powder – 1/2 tsp

Chicken masala – 1/2 tsp

Cumin seeds – 1/4 tsp

Method

When we starts making this stuffed internet puri, firstly, we are going to make the dough. Take a big bowl, add maida, oil, salt and give it a nice mix and make a smooth dough by gradually adding water to it and rest the dough for 15 minutes.

Secondly, we make the stuffing of the puri, for this first we have to nicely wash the potato and carrot, peal them and grate them. After that keep the grated potato and carrot in a bowl with water for 1-2 minutes. This step is necessary because potato changes its colour if we didn’t keep it in water. After 2 minutes strain the water nicely by squeezing with hand and keep in a bowl.

Now heat a pan and add oil to it. After oil becomes heat add cumin seeds, then add grated potato and carrot and give it a nice mix. Fry the potato for 2-3 minutes on medium flame. After that, add salt, turmeric, red chilli powder, chicken masala and fry for another 2-3 minutes.

Now add soya sauce, tomato sauce and mix well. After that add corn flour and nicely mix it in low flame. After frying this for 2-3 minutes switch off the gas and add black paper powder and mix well. So our stuffing is ready now.

Finally we are going to make the internet puri.  So for making this first divide the dough into smaller pieces like puri. After that take two balls of it and roll out them and keep one puri as it. So here we take the other puri and give it a nice cut like internet as I shown in the picture.

After that take the plain puri, put some stuffing and spread evenly. After that apply some water in the border of the puri with water and then cover the internet cut puri over it and seal the puri by pressing the edges so it can’t be opened during frying it.

Make all the puri similar to the first one. After that deep fry the puri with enough oil from both sides. Finally our internet puri is ready to serve. Serve the puri with tomato chutney or any type of sauce you like. In conclusion I say that must try this new recipe and enjoy with your family.
