Tomato & Dates Chutney

Tomato & Dates Chutney sounds different but friends believe me this is a very tasty recipe. This recipe is specially made by my husband. Once you try this delicious dish, you are going to fall in love with this.

Ingredients

Tomato – 250 gm

Dates – 300 gm

Ginger paste – 1 tsp

Turmeric powder – 1/2 tsp

Oil – 2 tsp

Sugar – 5 tbsp

Roasted fenugreek (methi)  powder – 1/5 tsp or 2-3 pinch

Salt as per taste

Green chilli – 2 no (cut into 2 pieces)

Bay leaf – 1 no

Panch Phoran – ¼ tsp

Tamarind pulp – 3 tbsp (soak 1 tsp tamarind with 3 tbsp water, mash nicely, strain and then use)

Milk – ½ cup

Jaiphal powder – 1 pinch

Method

To make this tomato & dates chutney, take a bowl, add roughly chopped tomato without seeds and add turmeric powder. Mix very well and rest for 10 minutes. Soak the dates in water for 15 minutes. Now heat a pan, add oil and let the oil becomes heat then add panch phoran, green chillies, bay leaf and ginger paste, fry for 30 seconds then add marinated tomato. Here we fry the tomato for 5 minutes on high flame. Now add soaked dates and salt as per taste.

Now mix all the ingredients nicely and continuously fry them for 8-10 minutes on medium to high flame or fry till tomato becomes soft. After that add milk and sugar and fry till it becomes dry and dark colour or reddish. Now add tamarind paste and mix all for 2 minutes then switch off the gas. After that add fenugreek powder and jaiphal powder and mix all the ingredients very well. Finally our tomato & dates chutney is ready to serve. Hyderabadi Chicken Biryani Recipe

Hyderabadi Chicken Dum Biryani

This Hyderabadi Chicken Dum Biryani Recipe is very delicious. This is the special recipe of my husband. If you follow the cooking process of this biryani you get a super tasty biryani at the end and believe me surely you will forget the hotel biryani. So friends let’s begin the recipe.

Ingredients

Chicken – 500 gm

Biryani rice – 300 gm

Sahi Biryani masala – 2 tsp

Whole spices list

(Used in chicken gravy and final tadka)

Cinnamon stick – 2 inch

Bay leaf – 4 no

Clove – 4 no

Black paper – 4 no

Cardamom – 1

Sahi jeera – ½ tsp

Masala for chicken gravy

Onion – 200 gm (4 medium sized)

Ginger and garlic paste – 4 tbsp

Tomato – 1 medium sized

Chicken masala – 1 tsp

Black paper powder – ¼ tsp

Kashmiri red chilli powder – 1 tsp

Garam masala powder – ½ tsp

Oil – 150 ml

Mix the below powder masala with 1 cup of water

Chicken masala – 2 tsp

Coriander powder – 1 tsp

Cumin powder – 1 tsp

Friends when make the Chicken Dum Biryani first we make the pre arrangement.

**Masala paste

Take a bowl, add 1 cup water, 2 tsp chicken masala, 1 tsp coriander powder and 1 tsp cumin powder. Now mix it very well and keep aside for further use.

Marinate the chicken

Take a bowl, add nicely washed chicken, 2 tsp curd(dahi), 1 tsp oil, ½ tsp salt (rest we will add while cook the chicken), ½ tsp turmeric powder and 1 tsp lemon juice. Now mix all the ingredients nicely and rest for 1 hour.

Boiling the rice

Boil enough water for cook the rice. Add nicely washed rice, 4 bay leaves, 2 cardamom, 4 inch cinnamon stick, 2 star flower, jaitri, 4 green chillies, ¼ cup pudina, 1 tsp lemon juice, 1 tsp salt and 1 tsp sugar. Now cook the rice till it becomes cooked 85% then strain all the water nicely.

Method for chicken gravy

let’s start the gravy for the Hyderabadi Chicken Dum Biryani. Heat a pan, add oil and let the oil becomes heat. After that, add ½ tsp of sugar. When sugar changes to red colour and create bubbles immediately add whole spices listed above then add chopped onion. Fry the onion till it becomes light brown in colour or cooked 65%. After that put the flame on low and add red chilli powder and then add ginger and garlic paste. Now fry all the ingredients for 5-7 minutes in medium flame. After that, add tomato and then salt as per your taste. Remember that we add salt ½ tsp while marinate the chicken.

Now fry all the ingredients for around 5 minutes or till the tomato becomes soft and cooked nicely. After that add the **masala paste and fry the masla by covering the lid.for around 5-7 minutes or till oil leaves the sides of the pan. When masala was completely cooked add the marinated chicken and mix very well. After that add 1 tsp chicken masala powder, ¼ tsp black paper powder and cook the chicken very well for 30-40 minutes by covering the lid. Fry the chicken in every 5 minutes. When chicken is completely cooked means oil leaves the sides of the pan add garam masala, mix well and switch off the gas.

Now it’s time for layering

Finally we make the layers of the biryani. Take a tadka pan, add 2 tbsp oil, when oil becomes heat add whole spices. After that take a big utensil and add the tadka into it, now spread a layer of rice. Now sprinkle ½ tsp biryani masala, some pudina leaf and then add a layer of chicken. After that, again make a layer of rice and repeat the previous step. Like this we make 3 layers and at the top sprinkle some biryani masala and some pudina leaf.

So here we cover the lid and keep it in the gas in low flame for 10 minutes. After 10 minutes high the gas for 30 seconds and then switch off the gas. Rest the biryani for 20 minutes. After 20 minutes chicken dum biryani is ready to serve. Serve the biryani with dahi raita. Tip

  1. First marinate the chicken
  2. Prepare the masala ( finely chop the onions, make ginger & garlic paste etc.)
  3. Cook the chicken
  4. When chicken was half cooked, cook the rice in another gas. So that chicken and rice both are cooked at a time. If u comfortable with this then do it otherwise do it separately.

Thai sweet chili sauce recipe made easily at home

Special Thai sweet red chilli sauce

This is a Thai recipe and here I am sharing how to make Thai sweet chili sauce. The sauce is very tasty and cooking time is also less than other sauce recipes. We can store this in an air tight container and keep it in fridge. The main ingredient I am using here is chili flakes. I am going to use some other ingredients to make it tastier. So let’s start the recipe.

Ingredients

Red chili flakes – 2 tsp

Red chili – 2 no

Garlic cloves – 4 no

Sugar – 8 tsp

Vinegar – 2 tsp

Salt – ½ tsp or as per your taste

Corn flour – ½ tsp

Method

Now I am telling you how to make sweet chili sauce by using the above ingredients. First we have to crush the red chili and cloves. Now take a container, add 2 cups of water, chili flakes, crushed red chili and garlic, sugar, vinegar and salt. After that we boil all the ingredients for 5 minutes in medium flame. Now take a cup add corn flour and then 2-3 tbsp water, now mix it and add to the boiling mixture. After that mix it nicely and boil for another 5-6 minutes or till the sauce becomes thicker. So here we make the sauce thicker.

Now switch off the gas and let it cool completely. After it becomes completely cool keep it in an air tight jar. Finally our red chilli sauce is ready to serve. Serve this sweet chilli sauce with any type of snacks. I like to serve this sauce with samosa, cutlet, spring roll or even with gupchup. You can also serve this with uttapam or any type of snacks you like. In this sweet chilli sauce garlic gives a very nice flavour. Once you make this sauce at your kitchen, you love to make this again. So friends make it at your kitchen and enjoy with your family and friends.

Bitter Gourd leaves Pakoda

Bitter gourd leaves pakoda is going to be a tasty snack. There are a lot of health benefits of bitter gourd leaves. To add this in our diet is really good for our health. It gives a bitter taste, but while we make this pakoda it does not give any bitter taste. So this pakoda must be tried once at every ones kitchen. You can have this pakoda with red chilli sauce, tomato sauce or any chutney as per your choice. So friends let’s start the recipe.

Ingredients

Bitter gourd leaves (Karela) – 10 no

Besan (Chickpea Flour)– 4 tbsp

Red chilli powder – 1 tsp

Turmeric – 1/4 tsp

Curry powder – 1 tsp

Cumin seeds – 1/2 tsp

Salt as per taste

Oil for deep frying the pakoda

Method

For making this bitter gourd leaves pakoda the main ingredient is bitter gourd leaves. First take the bitter gourd leaves, nicely wash them and keep aside. Now take a bowl for making the batter, add besan, red chilli powder, turmeric powder, salt as per taste, curry powder and cumin seeds. Mix all the ingredients very well. After that gradually add water and make a thick batter out of it. Here our batter is ready. So let’s heat a pan and add oil for deep frying the pakodas. After oil becomes heat put the gas on medium flame.

Now take one bitter gourd leaf, deep into the batter.(hold the bitter gourd leaf as it shown in the picture below, using this process we can easily dip the leaf in batter).

Holding from this side of the leaf is easy to dip in the batter.

After that remove the excess batter from the leaf and deep fry in the oil. Fry the pakoda from both sides till it becomes light golden brown in colour in medium flame. Don’t over cook, fry them like we fry pakoda. So let’s remove them from oil and keep in a plate. After that fry all the pakoda like the first one. Finally our bitter gourd pakoda is ready to serve. So friends serve the pakoda with any type of sauce or chutney you like. I like to have these pakodas with the combination of tomato sauce and chilli sauce. So friends you eat your pakoda with sauce or as per your choice.

Chitou Pitha-A special traditional recipe of Odisha

Chitou Pitha is a very tasty recipe. This is a traditional pitha (pancake) of Odisha. We can also named this as rice and Coconut Pancake. Taste of this pitha is very very delicious and this pitha is very soft as well. All Odia people make this pitha during a special occasion called as Cittalagi Amavasya.

 Ingredients

Rice – 1 cup

Grated coconut – 1 cup

Sugar – 1/5 cup or according to your taste

Curd (dahi) – 1/2 cup

Salt – 1/2 tsp or as per your taste

 Method

For making this Chitou Pitha first sock the rice for 5-6 hours. Wash the rice and strain the water from rice. Now take a blending jar add socked rice and grated coconut and also add a little water if need. Make a fine paste not so thick or not so thin. We should make a pouring consistency of this mixture. After that add sugar, salt, curd and mix well. Now leave it for 2-3 hours.

After 3 hours switch on the gas and keep it on low put a pan add oil spread evenly now add 1 full spoon of mixture (don’t spread the mixture, only pour) cover the pan leave it for 2-3 minutes or it completely cooked. You can check the pancake by using a toothpick. Don’t flip this pancake. When the chitou pitha is completely done transfer it into a plate. Finally garnish this pitha by using some chocolate syrup. Garnishing step is optional, you can skip this step. In the same process make all the pitha and enjoy.

Friends here I am adding some chocolate syrup to garnish the pitha but traditionally this is not done. I am adding this just to give it a nice look. If you don’t like then skip this step. It tastes very nice without any chocolate syrup. I recommend to have this without any syrup to get the traditional taste. So friends try this special odia recipe and enjoy.

Momo Chutney recipe

Momos are not completed without the spicy Momo Chutney recipe. This hot chutney is like the shadow of the momo. Here I am sharing a different cooking process of this chutney. The process is different but trust me it tastes very nice. So friends without wasting time lets start the recipe.

Ingredients

Tomato – 2 no

Dry red chilli – 2 no (without seeds) (here you can also use kashmiri red chilli)

Garlic cloves – 15 no

Salt as per taste

Oil – 1 tsp

** Here you can increase or decrease the amount of red chilli according to your choice. Because some people like more spicy and some like less spicy. I personally prefer 2 small red chillies without seeds because my daughters does not like too much spicy.

Method

For making the hot Momo Chutney recipe first nicely wash the tomatoes, cut them into big   pieces. Soak the red chillies for 5-10 minutes (you can also make it without soaking). Now heat a pan and add oil to it. After oil becomes heat add chopped tomato, soaked red chilli and garlic cloves. Give it a nice fry on medium flame for 10-15 minutes or till tomato nicely fried or becomes soft. Here we switch off the gas and let it cool completely.

After it becomes cool blend all the ingredients into a smooth paste. Now transfer the chutney into a bowl, add salt according to your taste and mix them very well. Now the hot momo chutney is ready to serve.

Here I am making this chutney especially for momos but you can also serve the chutney with uttapam, vada, samosa, gobi pakoda, chicken pakoda, chicken mudki, corn and potato cutlet or as per your choice. Sweet Mango Chutney

Sweet Mango Chutney is a very delicious recipe. We are going to cook this chutney with very few ingredients but believe me this is very tasty. Also it needs very few minutes to cook. Ingredients used in this chutney are easily available in our kitchen. During this summer this sweet mango chutney must be try at once. This chutney is made from raw mangoes. So friends must try this recipe at your kitchen and enjoy with your family. So let start this recipe without wasting any time.

Mango Chutney

Ingredients

2 medium size mango

1 bay leaf

3 tsp oil

6 tbsp sugar

½ tsp panch phoran

Salt as per taste

Roasted Fenugreek powder 2 pinch

Red chilli powder ¼ tsp

Turmeric ¼ tsp

Method

Cooking method of this Sweet Mango Chutney is very easy and interesting as well. First nicely wash the mangoes, peel it and then cut into small pieces. While we cut the mango must take care of the seed, don’t cut the seed. Take bowl add chopped mango, turmeric and salt, mix them very well and keep aside. Now heat a pan, add oil 3 tsp and let it becomes heat. After oil becomes heat add 1 tsp sugar. When sugar changes into bubbles immediately add panch phoran, bay leaf and then add marinated mango. Fry the mango for around 3-4 minutes on medium flame, stir continuously.

Now we are going to add 1 cup of water, mix well and cook the mango by covering it for 2-3 minutes or till the mango cooked completely. After 2-3 minutes add sugar and mix well. We cook this chutney till sugar dissolved and chutney becomes thick. When chutney becomes thicker, add fenugreek powder mix well and switch off the gas. Here the delicious Sweet Mango Chutney is ready to serve.

Bread Toast

Bread Toast is the healthy, quick and best morning breakfast. Kids like this breakfast very much. You can also use this as a Tiffin box item. So let start the recipe.

Ingredients

Bead slice – 6 (for 2 toasts)

Potato – 2 boiled, peeled and mashed

Chopped onion – 1 medium

1 finely chopped green chilli

1 tsp mutard oil

Salt as per taste

½ tsp Sambar masala powder

¼ tsp chicken masala

½ tsp roasted cumin seeds powder

¼ tsp chat masala

2 tsp tomato sauce

2 tsp chilli sauce

1 tbsp finely chopped Coriander leaf

 Refine oil/butter – 1 tsp for frying the bread

Method

The Bread Toast is going to be very tasty. So lets start from making the stuffing. For this first take a bowl, add boiled and peeled potato. Now mash it nicely after that add the spices like salt, mustard oil, chat masala, chicken masala, sambar masala, cumin powder, finely chopped green chilli, onions and coriander leaf. After adding all the spices give it a nice mix and keep aside. So, now roast the bread slices with some butter or refined oil and keep aside.

After that we are going to assemble the toast. First take a bread slice, add 1 tsp tomato sauce and 1 tsp chilli sauce. Spread the sauce on the bread. After that take 3 tsp potato mix or take potato mix as per your choice and spread on the bread slice. After that, add some chopped onion on the top of the potato layer. Now cover the stuffed bread with a plain bread slice. I am trying to make this with few ingredients but if you like then add grated cheese on the top layer means next to the potato layer.

After that we repeat the layering step again and cover it with another bread slice. Here I am using 3 bread slices for making 1 toast. So friends toast is ready.Now serve the bread toast with some tomato sauce and chilli sauce. Finally our healthy breakfast is ready. Scrambled Egg

Here I am presenting Scrambled Egg recipe with all my viewers with a very easy method of cooking. Here I am using very few ingredients but result will be just awesome.

Ingredients

Egg – 4 no

Onion – 1 medium (finely chopped)

Ginger and garlic paste – 1 tsp

Tomato – 1 no (finely chopped)

Mustard seeds – ¼ tsp

Turmeric powder – ½ tsp

Red chilli powder – ½ tsp

Green chilli – 1 (finely chopped)

Salt as per taste

Kitchen king masala – 1 tsp

(If you don’t have kitchen king masala then add mutton masala/chicken masala/curry powder)

Oil – 2 tbsp

Chopped coriander leaves – 1 tbsp

Method

Scrambled Egg is a quick recipe so without wasting time let start the recipe. First heat a pan on the gas, add oil to it. After oil becomes heat add mustard seeds, and green chilli. After that add finely chopped onions and fry until it light brown in colour in medium heat. Now add ginger & garlic paste and fry for 2 minutes. After that add tomato & salt and again fry all these for 2- 3 minutes or till tomato becomes soft. After tomato becomes soft add turmeric powder, red chilli powder and kitchen king masala and give it a nice mix. When masala is completely done or oil leaves the sides of the pan, break the egg and add to the masala.Now fry the egg with masala by continuously stirring it. Fry the eggs for 3-4 minutes on medium flame. When egg becomes completely dry then it was done. Finally add chopped coriander leaves and mix all the ingredients very well. Veg Momo

Veg Momo is a small ball with a nice shape, stuffed with juicy vegetables. Momo is a snack which is loved by almost everyone only because of its juicy stuffing and the spicy chutney. We found various types of momo and today I am sharing the veg momo recipe with you. So lets start the recipe….

Ingredients

For dough

All purpose flour (maida) – 3 cups

Oil – 1/2 tsp

Salt as per taste or 1/4 tsp

For stuffing

Cabbage – 1/4 of a small cabbage

Carrot – 1/2 of a whole

Onion – 1 medium size

Ginger – 1/2 inch

Garlic cloves – 4 no

Black paper powder – 1 tsp

Salt as per taste

Oil – 1 tsp

Method

While we are started preparing the veg momo first we make the dough. For making the dough take a big bowl, add all purpose flour, salt, oil and mix well. Now make the dough by gradually adding water and rest for 15 minutes.

After that we are going to make the stuffing for the momo. For make the stuffing first roughly chop the cabbage, carrot, onion and peel the ginger and garlic cloves. Now take a blender jar and roughly grind all the ingredients. Don’t make paste of it, just grind it like finely chopped as it shown in the picture. It takes just 30 seconds to 1 minutes. So you must check this in between you grind it.

After that transfer all the ingredients into a bowl. After grind all the vegetables it contains a lot of moisture. So we have to squeeze the mixture very nicely. After that add salt and black paper powder to the squeezed mixture and mix them very well.

Now we are going to make the final step of momo. Here we make small balls from the dough for preparing the momos. So, now roll out a ball (don’t roll out very thin, make it like we make for roti), fill some mixture and give a nice shape according to your choice.

After making all the momos we are going to steam them using a steamer for 10-15 minutes. after 15 minutes check the momos, if they looks transparent then momos are cooked. After that carefully remove them from the steamer. Finally our veg momo is ready to serve. Serve them with spicy tomato chutney.
